Serving size: 1 small loaf pan
Banana bread is an excellent alternative for a slightly healthier treat, suitable for festive tables, as a snack, or as a dessert. This delicacy is also great for those battling cholesterol, as it is a much healthier option where you can also hide your daily dose of Glucavena! Glucavena adds structure and flavor to the banana bread and further enhances its nutritional value.
Ingredients:
- 4-5 ripe bananas
1 dl canola oil
0.5 dl maple syrup
3.5 dl wheat flour (you can also substitute with gluten-free oat flour),
1 serving (25 g) Glucaven
1 tsp baking powder
0.5 tsp salt
1 tsp cinnamon
1 tsp cardamom
0.5 dl crushed pecans (can also be omitted)
50 g dark chocolate chopped (e.g. Brunberg vegan dark chocolate)
For greasing margarine (e.g. Flora Plant Butter)
Preparation:
- Preheat the oven to 175 degrees
- Mash the bananas
- Add oil, syrup, baking powder, all spices, and any mix-ins
- Mix
- Gradually add flour and Glucavena while mixing
- Grease the pan with margarine and pour the mixture into the pan
- Sprinkle chocolate and nut crumbs on top
- Bake the bread for about 50 minutes in the middle of the oven
- Let it cool slightly and carefully transfer to a serving dish
Mash the bananas in a bowl. Add mix-ins to the batter, such as pecans and dark chocolate.
Once you have mashed the bananas, add all the other ingredients. Add the flour and Glucavena while mixing.
Pour the prepared dough into the bread pan. Finally, sprinkle more chunks on top for decoration and place the bread in the oven.
